Crockpot White Bean Chicken Chili


Get ready for the easiest chili recipe ever. And one of the tastiest, to boot! My neighbors host a chili cookoff every fall, and last year this was one of the favorites. No one could believe it when our friend Debbie told us how easy it is. Joey really likes this, and we have it probably once a month in the fall and winter. I like to garnish with extra cheese, tomatoes, and cilantro. I think it would also be delicious with avocados, extra salsa, crushed tortilla chips, sour cream, green onion, diced jalapenos.. the list goes on. My neighbor makes hers with half black beans, and she also adds in some corn. I think one of the great things about soups and stews is that they are open to so many variations!

Go ahead and add this into your rotation; you certainly won't be sorry!!

White Bean Chicken Chili
  • 4 cans white beans, drained and rinsed
  • 3 boneless, skinless chicken breasts, trimmed of fat
  • 8 ounces Pepper jack cheese, cut into 2-inch cubes
  • 2 cups salsa
Combine the beans, cheese, and salsa in a crockpot. Nestle the chicken breasts into the mixture, and cook on low 6-8 hours. Remove chicken breasts, shred with a fork, and return to crockpot. Stir to combine, and serve with desired garnishes.

how many servings does the recipe yield?

I would say maybe 6 servings? Maybe a little more, or a little less... depends on serving size and what else you serve it with - and how big of an appetite you have :-)

Are you using regular 15-oz. size cans? I bought some Progresso White Beans last night and they are in larger 19-oz. cans. Do you think it would work if I still used 4 cans? It looks delicious and I can't wait. I'm going to post it and link you on my blog! www.fairhopefoodie.com

This might be a stupid question, but are you using already cooked chicken, or cooking raw chicken in the chili?

Its raw chicken. It cooks over the course of the 8 hours. Hope you enjoy!

I made this the other night for dinner. It was sooooooo good. I garnished with fresh cilantro, sour cream and a little squirt of lime juice. I loved it, my husband loved it and our 1 year old loved it. Thanks for sharing.

I am so lazy have made with frozen chicken and its fine. I keep frozen tenderloins from Costco in the freezer, can't be any easier than this recipe. Always a hit! Delish.
