I usually just do it for maybe 10-15 seconds.

When you whip it out of the fridge, I would let it get close to room temp before trying... the butter is just too cold and as you saw, will separate from the strawberries. Maybe let it warm back up a bit and try again? Not sure if you're still checking comments, but I just had a disaster with the frosting. :( everything looked so perfect until I put the strawberries in. At which point it curdled horribly. I tried whipping it for over 10 minutes, then thought it might have just got too warm. So I left it in the fridge overnight. It was a fairly solid block when I took it out of the fridge, but when I tried to whip it again it just separated out into globs of meringue and strawberry juice. So gross. :( any idea what I might have done wrong? I followed the recipe exactly. It tastes good but the texture is horrid and it's definitely not pipable. :(Josiehttps://www.blogger.com/profile/17949760149182965333noreply@blogger.comtag:blogger.com,1999:blog-5727460573195222782.post-86315715680388901612013-05-20T23:06:55.994-07:002013-05-20T23:06:55.994-07:00I just made these (they are in the oven) and I can...I just made these (they are in the oven) and I can't wait to see how they turn out. When I made the meringue the first time it was perfect, but I didn't ice them then because it was late at night so I put it in a bowl in the fringe. The next morning it was very stiff so I let it sit out and it looked like cottage cheese. So I threw it away and tried again but it turned out chunky and I couldn't use it. I didn't want to make a third batch so I just made a quick cream cheese frosting and put a strawberry on top which was very good but I wanted to taste the meringue with the cake.Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-5727460573195222782.post-3027606782611867102012-02-07T19:37:24.302-08:002012-02-07T19:37:24.302-08:00Anonymous, I'm so sorry - I just saw this.
