I definitely think you can use it, but you just may need to adjust the amount of broth. As a general rule, wild rice calls for cooking 1 cup of rice per 3 cups of liquid, and quinoa is 1 cup of rice: 2 cups liquid... so just decrease the chicken broth by a little less than a cup, then adjust accordingly to get the consistency you want. It would also simmer significantly less time - quinoa only takes about 15 minutes or so to cook, while wild rice takes much longer.
