Favorites from Friends and Family

I consider it to be the highest form of praise when my friends and family make recipes from my blog and give me the thumbs up.  I have to confess, anytime someone tells me that they're going to make one of my recipes I get a little nervous… like first date nervous.  What if they think it's gross or bland?  Or decide that I'm a terrible cook and blogger?  These are the ridiculous thoughts that go through my head.

But there are certain recipes that my friends and family just love.  Since I love my friends and family, and consider them to be the best of critics, I thought I'd do a quick round-up of some of their favorites.  Kind of an unofficial "Greatest Hits of Pink Parsley" sort of thing.

I did a bit of an informal survey, and thought about the recipes that I know my people love, and there are some definite common themes here.  These are all tried and true by my toughest critics:  the people I love most ;)

Everyone loves BBQ.  Apparently if I post a recipe featuring bbq sauce, it's going to be a hit.  My friends love bbq… which is why they are my friends :)

The Ultimate Cinco de Mayo Menu Planner

We are one week out from Cinco de Mayo, so you know what that means:  it's time to fiesta!  Aside from southern food, Mexican food is my favorite cuisine, so naturally Cinco de Mayo is one of my favorite holidays.  I'm not typically one to post a round-up for every holiday and occasion.  However, I have so many Mexican-inspired recipes here that I just love so much, and I want to help you plan the ultimate menu for the holiday.  So whether you are throwing a big blowout or just enjoying some Mexican food at home, I've got you covered.

Henry and Tucker are Uno: Let's Fiesta!



I've been putting off writing this post because I get so gosh darn emotional when I think about the past year.  What a wild year it has been!  When I found out that we were expecting twins, I was completely terrified, yet totally excited.  How in the world were they going to fit into our family, and how in the world was I going to manage four kids under five?!  I won't lie and say it was a totally seamless transition, they were the perfect babies, Caroline and Smith were the perfect toddlers, and my hair looked awesome every day.  The truth is, at times it was really hard.  There were definitely days where I took things hour by hour.  There were days that someone was crying at all times (one of those someones may have been me, ha).  But through it all, I tried really hard to savor every single minute with those sweet baby boys.  Because I knew from experience how fleeting those minutes are.

From the moment they were born, Henry and Tucker have been inseparable.  In the early days, they cuddled up together in their crib, arms intertwined and sleeping nose-to-nose; and now they crawl around the house together, laughing, babbling, and playing ball with each other.  They are just so much fun these days, and I know it will just keep getting better.


So as their first birthday rolled around, we knew we wanted to have a big party to celebrate the milestone.  I of course agonized over the theme - or whether to even have a theme.  In the end, our love for Mexican food won out, and we threw a big fiesta!  Since everyone jokes that first birthday parties are for the parents anyway, we just threw the party we wanted!  And let me tell you - this party was fun for all ages - babies, kids, and adults alike all had a blast.


I wanted a colorful, fun party, so I went with bright shades of yellow, green, blue, and orange.  And because chalkboards are so fun and trendy these days, I incorporated those into the decor as well.


Since the party was in the afternoon, I didn't need to serve a whole meal, but I wanted some substantial snacks.  The menu was as follows:




We also had some"kid" snacks out for the really littles ones - applesauce pouches, puffs, and cheddar bunnies are always a hit with Smith and the twins.

Everyone loved customizing their guacamole - my favorite combination was bacon, grilled pineapple, and fresh cilantro.  


I served the tortilla chips in brown lunch bags, and it made it so easy to just grab your chips and be on your way (plus no worries about little hands spreading germs to everyone by reaching into a community bowl!).


No fiesta is complete without margaritas, and the margarita station was a huge hit!  I made a HUGE batch of homemade margaritas, and served them in mason jars with brightly colored straws.  My drink dispenser has a weird hollow stand, so to dress it up, I just stuffed it with some bright tissue paper.  It might seem inappropriate to serve alcohol at a first birthday party, but Joey and I joked that we deserved some margaritas for making it through the year, ha!  No worries, we also served bottled water, lemonade, and Corona for those who don't drink tequila :)


I kept things pretty simple with the decorations.  I wanted to incorporate the chalkboard into a few areas, so for the foyer, I DIY-ed this faux chalkboard sign with black poster board, a white crayon, and a white piece of sidewalk chalk.  As you can see below the sign, we have out rubber duckies dressed as a mariachi band for the favors.  The kids LOVED these.


I wanted a fun background for the twins' highchairs, so I covered some letters in multi-colored yarn to spell "uno."  This was a really easy craft, and one I did while watching Top Chef one night.  I also made tissue paper banners for a few areas, and these were super easy as well.  Please don't mind my window - I promise it's not dirty - it rained the day of the party!


My favorite element however, was the background behind the food table.  I bought a roll of black paper, and Joey drew "Uno" in similar script to the invite, then I taped up some paper medallions for pops of color.  I attached another tissue paper banner to the tablecloth, then used a piñata for the centerpiece.  The cupcake stands were also DIY, using this tutorial, and orange crepe paper that I cut into fringe.

Finally, we blew up tons of brightly colored balloons, which Smith promptly got a hold of and released to the top of our 2-story foyer....



Since there were close to two dozen kids in attendance, we wanted to have plenty for the little ones to do to keep them happy and busy.  I ordered wooden maracas, then broke out our markers and extensive sticker collection.  The kids loved decorating the maracas, and it made for a fun favor to take home as well.  I also taped down brown paper to the table, so that my kitchen table didn't end up covered in marker and frosting ... bonus that it provided more places for the kids to color!


Remember the piñata from the food table?  Well it was stuffed with candy.  And while we didn't take any pictures, after the cake, we broke it open.  Obviously the kids loved that as well :)


Speaking of cake, I'm no cake decorator, so I just frosted their smash cakes and covered up the imperfections with sprinkles.  They donned their sombreros, we sang happy birthday, then it was time to eat!




Tucker and Henry love to eat, so they unsurprisingly dug right into their cakes as well.  I'm pretty sure they sat there eating cake for close to an hour.  And they even snuck bites of each other's cake, ha!

The Mexican-themed first birthday party was a blast, and we were so happy that so many of our friends and family could be there to celebrate with us.  Henry and Tucker had a great time, and it was such a fun party to plan.  Here's to another year of health and happiness!

2013 in Review: Top Posts of the Year

2013.  Oh man, what a year.  The twins were born on January 9th, so pretty much the entire year was spent in survival mode.  Over the past few months, I've felt like I made it to the other side... with only minimal permanent damage ;-)  It's been a really crazy, hectic, trying, and exhausting year, but without a doubt, it's also been the most rewarding.

It should come as no surprise that my blog was on the back burner this year.  I didn't post very often, and I'm okay with that.  But I'm starting to get my groove back a bit both in the kitchen and behind the computer, so I have lots to share with you guys in the coming year:  recipes, tutorials, and what I hope will be a useful series for many of you with kids.  Thanks so much for sticking with me this year, and I hope you all enjoy a festive end to 2013.

Without further adieu, here are the most popular posts of this year.

I only just posted this in December, but Skillet-Baked Ziti quickly became the top recipe of the year.  It's easy, fast, and so so delicious.  Baked ziti in under an hour?  You can't beat that.



Chicken & Summer Vegetable Rice Casserole was another instant favorite.  It's easy, relatively healthy, cheesy, and full of summer's best produce.  What else could you ask for?



Quinoa Chicken Chili in the crock pot was one of the first meals I made after we brought the twins home.  It was a huge hit with all of us, and it fed us for days.  Win win.



Oh man, this Strawberry Poppyseed Chicken Salad makes me yearn for spring like you wouldn't believe.  This was by far one of the best things I made this year, and I know exactly what I'll be making with the first strawberries of the season.



These Baked Breakfast Taquitos were another instant classic around here.  It's been a while since I've made a batch, and that needs to be remedied, stat!



Strawberries.  Margaritas.  Cupcakes.  Need I say more?



This was apparently the year of the strawberry, and combining them with rhubarb to make strawberry-rhubarb pie bars was a great decision.  You guys seemed to agree.



This Foil-Baked Lemon-Garlic Shrimp with Asparagus was a spinoff of another popular recipe around here, the foil-baked fish with black beans and corn.  I loved this variation, using plenty of lemon and fresh garlic; and serving it over asparagus made it such an easy and low-maintenance meal.



Easy one-pot meals were in heavy rotation this year, and this creamy one-pot lemon pasta was a great one.  It was embarrassingly easy, comforting, and yet somehow still elegant.



mmmm.  Strawberries + Red Velvet Cake.  These cupcakes elevated red velvet to another level.


I have a huge weakness for brownies, and this year I finally found the perfect recipe.  The Baked Brownie is impossibly chewy, chocolatey and just... perfect.



I made this shrimp caprese pizza countless times this summer, and it never got old.  Shrimp on a pizza was a new concept for me, and it's one I'll definitely be exploring further in 2014.


This Chicken Enchilada Quinoa Bake combined a few of my favorite things, and resulted in an awesome and healthy casserole.  Winner all-around!

10 Menus for Busy Weeknights


 

Summer is winding down.  Caroline starts kindergarten on Monday.  Caroline!  Kindergarten!  This week is a flurry of back to school shopping, PTA meetings, open house, curriculum night, ice cream socials, etc.  It's insane - and she's the only one in school so far!  I can only imagine how busy we'll be once we have all four in school.  I'm a stay at home mom, and I feel overwhelmed by it all.  Major props to working moms who have to fit in all these events around their already hectic schedules and long commutes. And once sports and after school activities start, it will get even crazier.

But don't be tempted by take-out and fast food.  I'm here to help.  Equipped with menus and a game plan, getting dinner on the table on a busy weeknight doesn't have to be a daunting task.  So here are 10 menus for busy weeknights - they're all ready in under an hour, have been repeat meals in our house, and I'll even give you a few tips and tricks to streamline the cooking process.  Feel free to share your favorite weeknight dinner too - I'm already stockpiling a list of dinners to have in my back pocket for the coming weeks and months!


Fresh Fruit (use whatever's in season - right now watermelon, peaches, cantaloupe, and/or berries would be great.  In the fall and winter, just slice up some apples, pears, or grapes).



Roasted Broccoli
Herbed Couscous or Rice

Preheat the oven to 350, toss some broccoli with olive oil, salt, and pepper, then roast 15-20 minutes while you prep the salmon and cook the salmon.  Couscous cooks really quickly, so I just throw the pot on to boil while the salmon's cooking, then chop some herbs to stir in at the end - a mix of parsley, chives, and basil works well here.  




Green Salad
Garlic Bread

The beauty of pasta dishes is that the sides are always pretty easy - salad and bread.  As far as the salad goes, if I'm making a heavier pasta dish (like lasagna, ziti, etc), then I try and keep the salad on the light side - mixed greens, tomatoes, cucumbers, onion, shredded carrots, and olives.  I typically just dress it with a lemon-dijon dressing, and it's good to go!  If skillet lasagna isn't your thing, try this Weeknight Bolognese or Chicken Parmesan Pasta.



Sweet Potato Fries or White Bean & Tomato Salad

Sliced Tomatoes and Cucumbers

Burgers and Fries make a classic dinner combination, but the mushroom-crusted turkey burgers and sweet potato fries lighten it up a bit.  I loved these burgers with this white bean and tomato salad, but it is a little more labor-intensive for a side dish (unless you roast your tomatoes ahead of time, in which case it's very easy!).  Sliced tomatoes and cucumbers are an easy way to get in some extra veggies, and they are so flavorful and abundant right now.

These taquitos are super fast and easy, and they are a perennial favorite.  You can save even more time by prepping the batch the night before, or even several days before and freezing them.  Corn on the cob and water lemon are my favorite side dishes right now - low maintenance, healthy, and filling.  And I know my kids will devour it!




Bacon or Sausage
Fresh Fruit

Breakfast for Dinner!  Kids think it's fun, it's easy and comforting, and you can eat the leftovers for breakfast!  Fry up the bacon or sausage and cut up the fruit while the strata bakes in the oven, and you're good to go.



Garlicky Sauteed Spinach 
Baguette

Like the skillet lasagna, this is all the flavor of lasagna without the time it takes to prep, layer, and bake a big pan.  To make the sautéed spinach, I just sauté a few cloves of minced garlic in a big skillet, then add several handfuls of spinach and a splash of water.  Cover the pot with a lid, then just allow it to wilt down.  It's a super easy and incredibly fast side dish.  And as always, fresh bread makes an awesome accompaniment.




Salad
Optional:  Cilantro-Lime Rice

The beauty of this dish is that it's pretty much a meal in and of itself.  In fact, oftentimes I don't even make a side with it.  A green salad would be a a nice addition, and if you're having company, cilantro-lime rice would round out the meal nicely as well.  I just cook rice according to package directions, then mix some chopped cilantro, salt and pepper, half a minced jalapeño, and some lime juice and zest.  If you like the concept of foil-baked fish and want some other ideas, I've also made variations using some Mediterranean ingredients, and a lemon-garlic version with asparagus.




Tomato & Cucumber Salad

Pizza night is alway a hit around here - and it's a great way to spend time with your kids while you make dinner.  Caroline and Smith love to help me stretch out the dough then arrange the toppings.  And they always snack on the ingredients - so be sure to shred a little extra cheese :).  This pizza can be made really quickly if you use a rotisserie chicken and pizza dough from your grocery store's deli (or keep some shredded chicken and homemade pizza dough in your freezer.  Just pull it out in the morning, and it'll all be ready to go when you get home.)  As the pizza bakes in the oven, just chop up some tomatoes and cucumbers, and toss them with a little oil, vinegar, lemon juice, and small pinch of sugar.  If you have any fresh herbs leftover from the pizza prep, feel free to throw those in as well.




Pasta

This meal is so simple, but it seems super fancy and elegant.  This would be great for a Thursday or Friday night - a celebratory meal for making it through a busy week.  Best enjoyed with a glass of white wine, of course.  I like serving this with fresh pasta (homemade if I have time, but the refrigerated pasta from the grocery store works fine in a pinch).  Spoon some of the sauce from the bottom of the baking dish over the noodles for an easy sauce.  Bring the water to a boil as you prep the shrimp, then cook the pasta and make the salad as the shrimp bakes.
